Granny's Cornbread
Ingredients
- 2 Tbsp vegetable oil
- 1 cup corn meal (polenta is an okay substitute)
- 1 cup plain flour
- 1/2 tsp salt
- 1 Tbsp baking powder
- 1 egg
- 1 cup milk
- 2 Tbsp sugar
Method
- Put the oil in the pan and heat in the pre-heated oven (~218°C, 425°F).
- Combine all of the other ingredients using a fork. You can do the 'well' and all that, but I don't bother. The batter WILL be lumpy so don't overwork it.
- Pour into the pre-heated pan and cook until golden brown (~25 minutes).
Serving Suggestions
Best served fresh out of the oven and covered with butter. Accompany with pinto beans and hamburger balls. Don't forget the green/spring onions!
