Granny's Cornbread

Cornbread Sticks

Ingredients

  • 2 Tbsp vegetable oil
  • 1 cup corn meal (polenta is an okay substitute)
  • 1 cup plain flour
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • 1 egg
  • 1 cup milk
  • 2 Tbsp sugar

Method

  1. Put the oil in the pan and heat in the pre-heated oven (~218°C, 425°F).
  2. Combine all of the other ingredients using a fork. You can do the 'well' and all that, but I don't bother. The batter WILL be lumpy so don't overwork it.
  3. Pour into the pre-heated pan and cook until golden brown (~25 minutes).

Serving Suggestions

Best served fresh out of the oven and covered with butter. Accompany with pinto beans and hamburger balls. Don't forget the green/spring onions!
